The menu includes falafel, hummus, Hedary’s Fries and a sampler (tabbuli, baba ghanoush, labni, feta, house-made pickles, olives, roasted cauliflower and more).
Hedary’s Mediterranean is now open at The Gramercy in Las Vegas. The family-owned restaurant joins the restaurant and wellness destination with an all-new, sit-down dining experience.
“Our family opened its first restaurant in 1960, and here we are, 65 years later, opening a new Hedary’s. This restaurant is so special in so many ways,” says owner Mariz Khoury. “When my family and I were discussing the menu for this location, we would talk about how our mom and dad taught us to make each dish.
“Many of the dishes are made in the exact same way our mom and dad made them using the very techniques they taught us. They instilled in us the importance of using the right ingredients. … We’re excited for everyone to come to Hedary’s and try all the different dishes. Behind each one is a story and many, many memories.”
The family story begins with Antoine, who was an accomplished chef before joining the Lebanese army in 1947. The little meals he fixed while off-duty caught the attention of officers. They assigned Antoine to cook for them. Antoine soon married Leila, a lovely Armenian girl, and together they had nine children.
Fifty years ago, the Hedary family introduced Fort Worth, Texas, to hummus, and the warm reception to their Mediterranean cuisine exceeded expectations. What started as a humble introduction to flavors grew into an iconic institution, with the Hedary family’s restaurant becoming a beloved staple in the community.
In 2006, daughter Mariz Khoury brought the family’s flavors to Las Vegas with Khoury’s Mediterranean Restaurant, where her son Christian now carries on the tradition. The new Hedary’s is now open in Las Vegas led by Mariz.
