New Dining: Eggslut to Hatch at The Rio in Late 2025

Eggslut at The Rio will be the brand’s first off-Strip location in Las Vegas, providing locals and visitors with direct and easy access to the breakfast spot.

Rio Hotel & Casino Las Vegas has announced that legendary breakfast spot Eggslut is joining the expanding restaurant collection. Scheduled to open in late 2025, Eggslut will be located near The Rio’s front desk.

Hatched in Los Angeles in 2011 by Alvin Cailan, Eggslut is a gourmet food concept inspired by a love for eggs. The menu features sandwiches and bites that give a twist to comfort foods while showcasing the restaurant’s star ingredient.

Eggslut at The Rio will be the brand’s first off-Strip location in Las Vegas, providing locals and visitors with direct and easy access to the breakfast spot. Eggslut opened at The Cosmopolitan of Las Vegas in 2016.

“We’re excited to welcome Eggslut to the resort’s growing culinary lineup,” said Patrick Miller, president and CEO of Rio Las Vegas. “At Rio, we’re focused on creating new and approachable experiences for our guests.

“Eggslut is a fan favorite with a strong following, and its arrival highlights our commitment to offering something fresh and exciting for locals and visitors alike. We can’t wait to welcome guests to the new space this winter.”

“We love being part of the Vegas scene and are thrilled to be growing, bringing even more access and deliciousness to the amazing local customers,” said Eggslut Co-Owner Jeff Vales.

Eggslut is the latest addition to the resort’s refreshed restaurant collection that includes Canteen Food Hall, Luckley Tavern & Grill and Las Vegas Chef James Tree’s upcoming steakhouse concept High Steaks in the former Voodoo Steakhouse. For more information, visit RioLasVegas.com.

Eggslut is a chef-driven concept, and its menu is a balance of comfort and innovation, celebrating food that is delicious and accessible. What began as a popular food truck cruising the streets of Los Angeles evolved into a culinary phenomenon.

Its first brick-and-mortar location opened in L.A. in 2013. Today, Eggslut has cultivated an enthusiastic global following, delighting food lovers in U.S. cities including Los Angeles, Las Vegas and soon to be Seattle, as well as globally in the United Kingdom and Japan.
