Downtown Las Vegas’ pan-Asian eatery 8 East at Circa Resort & Casino is spicing up the kitchen Saturday, December 11 with a special pop-up dinner in partnership with renowned Korean restaurant Miss Kim of Ann Arbor, Michigan. James Beard Award-nominated Chef and Managing Partner Ji Hye Kim will join 8 East’s Executive Chef Steve Piamchumtar to create an unforgettable one-night-only menu.
“I have been a longtime fan of Chef Ji Hye’s and Miss Kim’s, so to see this dinner come to fruition is pretty exciting for us,” said Dan Coughlin, Owner of 8 East. “Guests are going to witness incredible cooking techniques and it’s going to be hard to find another meal quite like what Steve and Ji Hye have in store.”
The evening’s menu will feature six courses served family-style in addition to two complimentary drinks and takeaway dessert. Tickets are at $150, with first-come, first-serve seating options at 5 p.m., 7 p.m. and 9 p.m. Booking is open at circalasvegas.com/8east-popup/.
Part of Zingerman’s Community of Businesses – led by Circa’s own Paul Saginaw of Saginaw’s Delicatessen – Miss Kim is known in Ann Arbor for delivering flavors and textures found in traditional Korean cuisine. The restaurant’s menu highlights Chef Kim’s childhood growing up in Korea, using techniques inspired by her ancestors and ancient cookbooks. Her exceptional culinary background has led to a James Beard Foundation nomination for Best Chef Great Lakes 2020 as well as being named one of the Best New Chefs 2021 by FOOD & WINE.
Kim said, “Miss Kim is all about celebrating the foods, flavors and culture of our Korean heritage. Our partnership with 8 East is a perfect match as Dan, Steve and the team have developed a fantastic concept paying tribute to Asia’s culinary legacy. This is sure to be a beautiful evening and we’re grateful to Circa for giving us a space to be creative.”
Inspired by Asian metropolitan food markets, 8 East is Circa’s hip and high-energy pan-Asian concept. Inspired by Couglin’s travels throughout Asia, the restaurant offers small, shareable plates inspired by China, Japan, Vietnam, Korean and Thailand.
