At the heart of the New York-New York dining room, America’s sculptural U.S. map is reborn as a projection canvas powered by a state-of-the-art mapping system.
Ark Las Vegas Restaurant Corp. will unveil in September a total transformation of America at New York-New York Hotel & Casino, a destination for 24-hour dining on the Las Vegas Strip for nearly three decades. Trading nostalgia for contemporary Americana, the reimagining spans a full remodel, new menu of breakfast, lunch, dinner and late-night and over-the-top cocktails.
“America has always been a home base on the Las Vegas Strip, whether you’re visiting from across the globe or working nearby and craving something exceptional at any hour,” said Ark Senior VP Keith Eure. “This renovation was about evolving that experience through new design, including a massive interactive U.S. map and diverse cuisine that captures the best of what America has to offer.”



The 9,800-square-foot transformation by architectural firm Zebra reimagines America from the ground up, trading the diner’s red, white and blue for a richer American palette of terracotta, walnut and teal. Soaring ceilings and a faux skylight bathe the space in light designed to evoke the feel of natural sunlight and echo the original America Restaurant in New York City.

Nearby, a mural of the Statue of Liberty’s face reframes the restaurant’s America logo, anchoring the room with a fresh, graphic take on a familiar American icon.
As one of the last remaining full-service, 24-hour restaurants, America welcomes locals, hospitality and visitors alike around the clock. Located steps from T-Mobile Arena, the restaurant remains a convenient stop before or after concerts and other live events, while HDTVs throughout the dining room and bar make it a destination for sports viewing at any time of day.
Executive Chef Brandon Flores has developed more than a dozen new dishes, including seared salmon with green beans, cauliflower purée, frisée and sherry shallot vinaigrette; cauliflower steak with tomato confit, radish, crispy shallots and balsamic vinaigrette; bacon mac-n-cheese with cheese blend and crispy herb crust; and wood-fired flatbread with prosciutto, arugula, olive oil and balsamic glaze.




Longtime favorites remain, including the oversized “3-Pounder” pancake; N.Y. State of Mind breakfast with two eggs, bacon or sausage and a choice of sides; steak and eggs with prime New York strip; 10-ounce ribeye special with vegetables and baked potato; and Philly cheesesteak with thinly sliced, sautéed ribeye, peppers, onions, mushroom, provolone and cheese sauce.
Dessert is where America has always gone big. Standouts include the tableside banana split with strawberry, vanilla and chocolate ice creams and all the classic fixings and the birthday cake milkshake with vanilla custard, birthday cake and a jelly-filled doughnut.
The drink menu includes America’s Biggest Mimosa with JP Chenet sparkling wine, orange juice, strawberries and orange slices, while the Strawberry Shortcake Loop mixes Skyy vodka, cream, Fruity Pebbles, cranberry and lemon in a doughnut-shaped glass topped with cotton candy.
America’s Hero Happy Hour will continue to honor military and first responders daily from 3 to 6 p.m. and 3 to 6 a.m. Specials include $1 coffee, $4 Budweiser and Bud Light, $8 Flecha Azul Reposado margaritas and 20% off food. The renovation is being completed in phases, section by section, allowing America to remain open around the clock throughout the process.
