Chef de Cuisine Ken Lum, who has been part of the Emeril’s family for 15 of its 30 years, curated the menu as a tribute to his early days in the kitchen.
Emeril’s New Orleans Fish House at MGM Grand Hotel & Casino will commemorate its 30th anniversary with a Throwback Thursday menu available every Thursday beginning Nov. 6 through Dec. 18 (excluding Thanksgiving).
The limited-time menu revisits some of the restaurant’s most beloved dishes from its early years, offering guests a nostalgic taste of Emeril’s iconic New Orleans flavors.
The Throwback Thursday menu features:
- Country-style gumbo with homemade andouille sausage, Creekstone Farms beef, duroc pork and Jidori chicken with steamed rice
- Seared ahi tuna lettuce wraps with jalapeño, citrus ponzu and crispy wonton strips
- Bacon-wrapped shrimp with sweet corn relish and Creole tomato glaze
- Pecan-crusted Texas redfish with creamy Anson Mills grits, sautéed haricot vert and Creole meunière sauce
- Sweet barbecue salmon with homemade andouille sausage potato hash and spicy onion crust
- Campfire cedar plank steak featuring Creekstone Farms prime ribeye, warm rémoulade, Trinity and Emeril’s Worcestershire sauce
- New Orleans beignets with café au lait anglaise, chocolate sauce and strawberry coulis


Chef de Cuisine Ken Lum, who has been part of the Emeril’s family for 15 of its 30 years, curated the menu as a tribute to his early days in the kitchen.
“All of the dishes, except the beignets, were part of the menu during my first tenure here,” Lum said. “The sweet barbecue salmon and campfire cedar plank steak were original creations, and the pecan-crusted redfish, ahi tuna lettuce wraps and bacon-wrapped shrimp were among our most popular dishes.
“My introduction to New Orleans cuisine began with the Country Gumbo, which was a dish that taught me the soul of Creole cooking.”
The beignets, Lum added, are a sweet symbol of what’s next. “There was a time when beignets were being served here, and we’re working on bringing them back,” Lum said. “This menu felt like the perfect opportunity to showcase our new setup and reintroduce that tradition.”
Emeril’s New Orleans Fish House opened its doors in 1995, bringing the bold, soulful flavors of Louisiana to the Las Vegas Strip. The restaurant has remained in its original MGM Grand location ever since, making it the longest-standing celebrity chef restaurant in the same location on The Strip.
Emeril’s New Orleans Fish House has received Wine Spectator’s “Best of Award of Excellence” every year since 1996, with a wine inventory of more than 1,300 selections.
“It’s hard to believe it’s been 30 years,” said Chef Emeril Lagasse. “From the very beginning, Las Vegas has felt like home. I’m so proud to be part of this amazing community.

In addition to the anniversary menu, Emeril’s New Orleans Fish House continues to offer its daily oyster selection featuring five to seven varieties, a rotating weekly chef’s menu and the immersive Kitchen Table experience, where guests can enjoy a custom market menu inspired by the day’s freshest catches.
