On the night of Monday, Sept. 15, 2025, at the Savoy Hotel in London, England, Ada’s Food + Wine goddess Kat Thomas and chef and partner James Trees accepted the award for “Most Original Wine List” in the World for a second consecutive time from The World’s Best Wine Lists.
The awards, organized by World of Fine Wine magazine and judged by a panel of renowned experts, honor the finest wine restaurants and bars across the globe. The wine-centric restaurant co-owned by Trees and LEV Group competed against nominees from Australia, South Africa, Thailand and Romania.
“Winning the ‘World’s Most Original Wine List’ for the second year in a row acknowledges that our community craves more than what’s in their glass. They crave connection to people, to place – to purpose,” Thomas said.
“We are so proud of Kat and the whole team at Ada’s,” added Trees, whose Las Vegas portfolio also includes Esther’s Kitchen, Bar Boheme, Petite Boheme and the upcoming High Steaks at The Rio. “What they do is truly special, and we are thrilled to see the world recognize that.”

Named in homage to Ada Coleman, the legendary barwoman of London’s Savoy Hotel, Ada’s is a wine-centric restaurant from Trees and LEV Group. Chef de Cuisine Jackson Stamper collaborates with Trees on shareable dishes that draw inspiration from Mediterranean and Asian flavors.
Advanced Sommelier Thomas curates the award-winning wine list, categorizing selections by character – such as zesty, bright and aromatic or bold, spicy and rich rather than grape or region, creating an inviting and adventurous experience.
