New Dining: Tamba in Town Square Is Rethinking the Modern Cocktail Menu

Each drink is spoken in Tamba’s own voice, rooted in tradition and expressed through a distinctly Contemporary Indian lens at the 2026 James Beard finalist restaurant.

Following its recognition as a 2026 James Beard Foundation Award finalist for Best New Restaurant and its recent AAA Four Diamond designation, Tamba Las Vegas is once again redefining the dining experience with the debut of The Bar at Tamba, a reimagined cocktail program launched Saturday, Aug. 1, led by Tamba Director of Bar and Spirits Sean Santos.

The new bar menu, The Journey, features 24 cocktails organized by six emotions: Renewal, Joy, Curiosity, Passion, Confidence and Celebration rather than by spirit or cocktail style. Guests are encouraged to choose a drink based on the experience they’re looking for, with each cocktail incorporating ingredients rooted throughout India, including curry leaf, tamarind, saffron, ghee, thandai, rose and masala chai.

“The best cocktails aren’t remembered because of the spirit that’s in them,” said Santos (pictured in the main photo). “They’re remembered because of how they made you feel. That’s what inspired this menu. We wanted to create a program that begins with emotion instead of alcohol and guides every guest through an experience.”

Developed over the course of a year, The Journey menu represents an evolution of Tamba’s bar philosophy, authored by Santos, who has led the program since the restaurant reopened. “I’ve always had a love for taking care of people,” Santos said. “I just want everyone to be able to feel confident in trusting us as we guide them through each experience.”

The menu features 24 cocktails in six chapters, including 10 seasonal expressions that reinterpret classic forms through Indian flavor and technique. Highlights:

  • Panipu-Rita: the margarita rebuilt on pani puri, a street snack. Tangy, savory and spiced, built on a house spice water of Kashmiri and bird’s eye chili, finished with micro cilantro grown in-house and a dried chili.
  • Tamba-Tini: the martini rebuilt on curry leaf and lemon, clean and briny; a classic viewed through a Contemporary Indian lens.
  • Touch of Tamarind: barrel-aged cachaça, fino sherry and tamarind, a study in wood, tang and dark chocolate.
  • Thandai Colada: the piña colada with thandai, the festive drink of Holi.
  • Amrood Cloud: street guava beneath a cloud of house-made kulfi cream. Joy you can see.
  • Banana Halwa: a homage to the Vieux Carré deepened through the memory of Indian banana halwa. Made with in-house “Banana-Ghee Bourbon.”  

Behind the list is a bar team of six – four bartenders and two apprentices – who are trained on the classics. It is a standard Santos sets deliberately.

“I’m constantly advocating for our team to continue to learn, especially for those behind the bar, so we can all have ownership of the program and be proud of that,” Santos said. “Like we say, we’re just starting this journey. We’ve got a lot ahead of us.”

The Bar at Tamba marks another milestone for the restaurant, extending its reputation as one of the country’s most exciting Contemporary Indian destinations. By organizing the menu through feeling and grounding every drink in an ingredient of India, Tamba continues to push the boundaries of hospitality in Las Vegas. A dedicated spirit-free program, The Atlas of Elixirs, follows later this summer.
