I dined at Ai Pazzi with Tom Bassett a few weeks after the grand opening in the former Spiedini, and dinner was fantastic. It was a fabulous feast fit for royalty!

Where did the year go? It seems like just yesterday that Celebrity Chef and “Top Chef” Cheftestant Fabio Viviani opened his Italian restaurant Ai Pazzi at The Resort in Summerlin on July 3, 2025, and celebrated with a grand opening nine days later that I attended with Lauren Hudman.

Chef Viviani, born in Florence, Italy, competed in “Top Chef: New York” (Season 5) in 2008 and, with his charm, talent, handsome good looks, engaging personality and thick Italian accent, finished fourth and was voted fan favorite. He later returned for “Top Chef: All Stars” Season 8.

I dined at Ai Pazzi with Tom Bassett, who photographed the beautiful dinner images, a few weeks after the grand opening in the former Spiedini, and dinner was fantastic. It was a fabulous feast fit for royalty:

  • Fabio’s Wagyu Meatball
  • Caprese salad prepared table side (I enjoy table-side preparations)
  • Short rib agnolotti
  • Ossobuco
  • Xuppa di pesce
  • Polenta
  • Focaccia
  • San Pellegrino
  • Tiramisu
  • Cappuccino
  • Cocktails Paloma di Roma, Montenegro Nights, Campari Jungle and Tiramisu Martini

Yes, it seems as if we ordered the entire menu! And had a ton of delicious leftovers.

Bonus: Sparklers for other diners’ birthdays. Really great food and cocktails and ambience – and I’m still full just thinking about the hearty Italian dinner one year ago.

Viviani is back in Las Vegas to celebrate the first anniversary of Ai Pazzi. He spoke with VegasPublicity.com last October when he launched Ai Pazzi Pizza pizza counter with the adjacent Pearl Oyster & Crudo Bar by Chef Viviani at The Resort in Summerlin and welcomed new customers in Las Vegas:
