What a night at Chef Sam Marvin’s Echo & Rig in The District at Green Valley Ranch in Henderson, which sold out its debut Monday night Chef’s Table culinary series Wagyu Steak Frites Supper on Monday, March 30.

The new Monday evening Chef’s Table culinary series is one menu, one concept and one shared experience for the entire restaurant. For one Monday night only, the regular steakhouse menu is unavailable for the curated experience.

The second Chef’s Table has been scheduled for Monday, April 20, and it is seafood-inspired with the same one menu, one concept and one shared experience model in effect. It is likely to sell out, as well.

Chef’s Table is limited to 200 guests with reservations from 5-10 p.m. Monday, April 20. Early access for reservations begins Wednesday, April 8; click here.

I covered the grand openings of Echo & Rig in Tivoli Village in 2013 and the Henderson location in 2023 and am an avid fan of both locations. My brother Charles Chareunsy and I dined at the debut Wagyu Steak Frites Supper on March 30 in support of Chef Marvin (pictured in the main photo).

At the sold-out inaugural dinner served from 5-10 p.m.: an amuse bouche of pastrami on rye, unlimited Caesars salad and Kennebec fries (there weren’t a lot of takers because there was plenty of food), bread and berry cobbler.

Also: add-ons the jumbo shrimp cocktail, Bloomsdale spinach, mac and cheese, cocktail and wine pairings. The featured Fullblood Wagyu New York Strip was one of the most flavorful and perfectly prepared steaks I’ve had in a while.

Our servers, Laura and Shakur (spelling?) among them, and GM Robert were excellent. And it was great to chat with Chef Marvin and hear about his next project at AREA15 west of the Las Vegas Strip, a burger joint. Bon appetit!
