Wynn Las Vegas and BOND Hospitality have debuted Sartiano’s Italian Steakhouse, a collision of soulful Italian cuisine and classic steakhouse tradition. The restaurant pays homage to BOND Hospitality founder Scott Sartiano’s Neapolitan heritage with culinary direction from three-time James Beard Award-winning Chef Alfred Portale.

Located in an alcove adjacent to Zero Bond and overlooking Wynn Golf Club, Sartiano’s Italian Steakhouse, which opened Wednesday, March 4, channels the energy of gathering, socializing and celebrating unforgettable nights.
Executive Chef Michael Rubinstein, a Las Vegas native with more than 15 years of culinary experience from some of the city’s most prestigious restaurants, helms day-to-day kitchen operations and brings a bold technique and local perspective.



Sartiano’s menu perfects the art of sharing, echoing signature dishes from Sartiano’s New York flagship while also introducing new creations conceived exclusively for Wynn Las Vegas on the Las Vegas Strip.
The bistecca program showcases wet- and dry-aged prime cuts and American Wagyu, including a 40 oz. Dry-Aged Bistecca Fiorentina carved tableside with porcini, peppercorn and salsa verde and the American Wagyu 10 oz. New York Strip, with enhancements including Truffle Short Rib & Egg Yolk Raviolo, Butter-Poached Maine Lobster Tail and Grilled Red King Crab Merus Scampi.
Additional highlights include the Caviar Cannoli (pictured in the main photo by Sabin Orr) with whipped mascarpone and chive; Fettuccine Alfredo alla Romana, served tableside, with aged Parmigiano and burro di bufala; and a Plateau Di Mare with oysters, clams calabrese, jumbo shrimp, king crab, Maine lobster, grilled seafood salad, toro and caviar.
“With the expansion to Las Vegas, I am grateful to merge my love of Italian cuisine with the energy of Las Vegas set inside a stunning space,” said BOND Hospitality Director Alfred Portale. “We have created a menu that draws inspiration from Scott’s heritage while paying homage to some of our favorite dishes served in New York.
“Our bistecca program is unlike anything in Las Vegas, sourced from family farms and iconic ranches, with tableside service that complements the atmosphere and fabulous enhancements for a variety of American Wagyu and prime steaks.”



The bar program is overseen by Mariena Mercer Boarini, Wynn’s Master Mixologist and 2026 James Beard Foundation Award semifinalist for Outstanding Professional in Cocktail Service. The menu channels the luxury of Italy with imaginative signatures, an inventive martini program and zero-proof options. Standouts include the following:
- The Black Card, a luxury martini with Stoli Elit Vodka, nori-infused Italian olive brine, a whisper of Riserva Carlo Alberto Vermouth Torino and Oscietra caviar-stuffed Castelvetrano olives
- Divine Comedy, a Sicilian-spiced Old Fashioned with Maker’s Mark 46 “Wynn Signature Barrel” Bourbon, Amaro Meletti and orange cinnamon rooibos, bittered and cubed
- Sorrento Sunset, a Paloma spritz with Casa Dragones Blanco Tequila, Giffard Pamplemousse Liqueur, Contratto Bianco, lime juice, Sanpellegrino, Pompelmo Sparkling and hibiscus ice
Sartiano’s wine list focuses on Italy, France and the U.S., with an emphasis on red wines from staple regions. Tuscany, Piedmont and Veneto comprise the largest portion of Italian wines, with additional selections from Burgundy, Bordeaux and Napa Valley. The range offers guests many selections that complement the menu.

The dessert menu is elegant and playful, with options that include an ultra-light Tiramisu, the punchy Lemon Fantasy and comforting Panettone Bread Pudding. Guests may also choose from the Italian Cookie set, molten Chocolate Almond Torta and the breakout Butterscotch Budino.
The sophisticated space, a collaboration from Wynn Design & Development President and Chief Creative Officer Todd-Avery Lenahan and Tihany Design Principal Alessia Genova, takes inspiration from mid-century Milanese modernism. The atmosphere evokes a past era yet sets the stage for forward-thinking Italian dining.
Sartiano’s Italian Steakhouse is open Wednesdays through Sundays. The bar opens at 4 p.m., and dinner service starts at 5 p.m. More information and reservations are available here.
