Red Rock Casino Resort & Spa will welcome Los Angeles culinary destination The Cheese Store of Beverly Hills for a one-day-only pop-up experience at Gridiron Grill near the Sportsbook from 11 a.m.-4 p.m. (originally released and reported as 12-5 p.m.) Saturday, Feb. 28. For the first time in Las Vegas, guests can enjoy a curated selection of the shop’s cheeses alongside freshly prepared offerings.

Signature sandwiches include Le Gourmand with house-roasted turkey, triple crème brie and maple onion confit; La Macellaia with prosciutto cotto, finocchiona, coppa, spicy ventricina salami and provolone; and Le Rôti with roasted Double R Ranch ribeye with melted gruyère and havarti.

Additional offerings will include a chicken Caesar salad with grilled Jidori chicken; mini cheese boards featuring gouda, brie and goat cheddar; house-made sweets including warm chocolate chip cookies and dolce ricotta; and specialty sides such as Zippy Dill & Vinegar potato chips.

Founded in 1967, The Cheese Store of Beverly Hills features gourmet rare and seasonal cheeses, fine wine, specialty imports and delicacies. The Cheese Store of Beverly Hills has continued to build a following for its sandwiches. The limited-time pop-up aligns with Red Rock’s continued commitment to showcasing notable culinary brands through unique, food-driven experiences.
