Cabo Wabo Cantina, rocker Sammy Hagar’s rockin’ Strip-side cantina at Miracle Mile Shops at Planet Hollywood, is turning up the energy with its new brunch 8 a.m-2 p.m. daily mixing Baja-inspired flavors, bottomless cocktails and Cabo Wabo’s rock ’n’ roll vibe.
Brunch-goers can enjoy Cabo Wabo’s dishes including chilaquiles con huevos with tortilla chips layered with red or green sauce, Oaxaca cheese, onion, cilantro, Mexican crema and cotija cheese served with two eggs any style at $17.99.
How about brioche French toast with warm syrup, fresh berries, powdered sugar and whipped cream for $16.99 and a breakfast burrito stuffed with scrambled eggs, potatoes, chorizo, queso sauce and cheddar and jack cheeses served with a fruit bowl at $19.99.
There’s a breakfast quesadilla loaded with scrambled eggs, bacon, avocado, tomato, onion, cilantro and cheddar and jack cheeses served with Cabo Wabo potatoes at $19.99.
Signature lunch favorites include Baja shrimp ceviche made with Gulf shrimp, cucumber, tomato, red onion jalapeño and cilantro topped with spicy tortilla chips at $19.99 and short rib enchiladas with shredded beef short rib, pasilla chile sauce, jack and cheddar cheeses and crema Mexicana at $25.99.
There’s Sammy’s tequila shrimp featuring Baja shrimp, garlic, cilantro, Cabo Wabo tequila-lime sauce and arbol chilis served with garlic bread at $23.99 and Jack and Coke barbecue bacon cheeseburger topped with lettuce, tomato, cheddar cheese, Jack and Coke barbecue sauce, crispy fried onions and pickles at $24.99.
