“Our goal with Milk Bread is to introduce Las Vegas to a way of baking that’s both traditional and global,” said Elevate Hospitality Group Partner Freddie Paloma.
Elevate Hospitality Group, the team behind popular cafe Moignet and social restaurant GYU+, introduces Milk Bread, a unique international bakery rooted in Japanese tradition with Filipino soul. Located at 3431 S. Jones Blvd in Las Vegas, the fast-casual bakery opens on Saturday, Dec. 13, at 11 a.m. and will be open Wednesdays through Mondays from 9 a.m. to 5 p.m. (closed Tuesdays).
Lead Pastry Chef Yuka Takamizawa (Moignet, Sweets Raku) brings a new style of breadmaking and pastry craftsmanship to the U.S. She introduces Shokupandesal, which is a mix of the Japanese Shoku Loaf – a classic milk bread known for its fluffy, cloud-light texture and subtle sweetness – and Filipino Pandesal bread.
“Our goal with Milk Bread is to introduce Las Vegas to a way of baking that’s both traditional and global,” said Elevate Hospitality Group Partner Freddie Paloma. “We’ve taken the classic Japanese Shoku loaf and blended it with Filipino inspiration, creating something that feels nostalgic but entirely new.”

With 30 seats and a warm, minimalist design, Milk Bread is equal parts everyday café and celebratory destination. Guests will enjoy a lineup of sweet and savory options, including the following:
- Cakes and breads made fresh daily
- Custom birthday cakes
- Seasonal specialties include fruit cakes, Christmas cakes, cookies, gingerbread and hot chocolate
- Pour-over coffee brewed to complement the light, delicate flavor profile of the breads
