New Dining: El Cortez to Open New York-Style Steakhouse Alex Prime in Fall in DTLV

Designed by Kenneth Ussenko Design with architecture by Jive Architecture, the dining room channels 1941 origins and a clean, contemporary sensibility.

El Cortez Hotel & Casino, celebrating 85 years, has announced an early fall opening for Alex Prime, a luxury New York-style steakhouse in Downtown Las Vegas. The announcement reflects the revitalization of El Cortez under Las Vegas icon Kenny Epstein, whose leadership has centered on honoring the property’s legacy while positioning it as a destination for a new generation of guests.

“There is nothing quite like a truly great dining experience, and that’s exactly what we’re bringing to Downtown Las Vegas with Alex Prime,” El Cortez Hospitality VP Bart Mahoney said. “We have assembled an exceptional team with a singular goal in mind: to set a new benchmark for luxury dining in Downtown Las Vegas.”

Leading that team is David Robins, whose fine dining career spans acclaimed global culinary destinations. “From the caliber of service to the quality of cuisine, we are creating Alex Prime to bring the vision Kenny Epstein has for a luxury steakhouse to life,” said Robins.

Alex Prime is the next chapter for a property that has been part of Las Vegas history since 1941, from its early days under Benjamin “Bugsy” Siegel and Meyer Lansky to the era of Rat Pack regulars who made it a fixture of classic Las Vegas.

The menu is anchored by USDA Prime cuts alongside slow-roasted prime rib. Seafood includes chef-driven dishes and premium shellfish. Italian pasta dishes lend a sense of old-world heritage, and starters reflect classic and contemporary. Executive Chef Joe Swan will oversee the menu, rounded out by desserts.

The beverage program features wine built around New World varietals and classics, with selections paired with the menu. The cocktails balance steakhouse standards, including martinis and old fashioneds, with signature creations.

Designed by Kenneth Ussenko Design with architecture by Jive Architecture, the dining room channels 1941 origins and a clean, contemporary sensibility. The restaurant is being constructed by Harris Associates and will seat 150+ guests. The restaurant will be steps from the main entrance that offers free valet parking.
