The STRAT Hotel, Casino & SkyPod’s iconic and award-winning restaurant, Top of the World, has introduced the flavors of spring and summer to new dishes, available now.
Crafted by Chef Chad Castanino to incorporate seasonal ingredients and flavors, Top of the World’s seasonal dishes include a variety of new starters, seafood selections, entrées, desserts and specialty cocktails.
New starters include spring pea ravioli served with preserved lemon, ricotta salata cheese and toasted breadcrumbs; prime beef tartare surf and turf served with chilled shrimp, avocado and smoked tomato gazpacho; and prime kalbi short ribs prepared with a Korean chili and soy sauce glaze, green onion and toasted cashews.
New seafood selections include a tuna and king crab poke paired with yuzu whipped avocado, crispy wonton and spicy cucumber; seared seabass served with lemon, garlic, tomato, capers and brown butter; seared ahi tuna served with smoked clam, potato puree and Sungold tomato vinaigrette; and grilled Icelandic salmon served with spring ratatouille, vine roasted tomatoes and 25 year aged balsamic.
Additional entrées include smoked pork chop served with brined apple and bacon chutney; crispy skin half chicken served with spring pea and gremolata; and stuffed poblano served with quinoa, charred corn, asparagus and chipotle tomato sauce.
An array of new sides include roasted harissa glazed carrots, grilled shishito peppers, and others.
Top of the World’s new spring desserts include a hummingbird cake, made with bananas, pineapple, pecans, cinnamon and nutmeg topped with cream cheese frosting, white chocolate ganache, toasted coconut and house-made cinnamon ice cream; and key lime mousse made with graham cracker streusel crust and toasted lime scented meringue.
New cocktails include Cool as a Cucumber, made with Empress gin, Effen cucumber vodka, lemon juice, basil-infused simple syrup and soda water; Honey Bumble Bee, made with Deep Eddy ruby red grapefruit vodka, fresh lemon juice, pineapple, Aperol and honey syrup; and L’Orange Creamsicle, made with Grey Goose L’Orange vodka, Absolut Vanilia vodka, Aperol, orange juice, simple syrup and half and half; and more.
Famous for its spectacular 360-degree rotating views from the top of The SkyPod 1,000 feet above the Las Vegas Strip, Top of the World serves elevated steaks and seafood complemented by fresh, seasonal ingredients. Top of the World is now open from 4 – 11 p.m. daily and will begin its daily summer hours from 5 p.m. – midnight beginning Tuesday, June 1.
