Chef Ricardo Romo joins the new ownership in Henderson favorite restaurant
Chef Ricardo Romo will bring his culinary talents to the off-Strip restaurant Chef’s Roma Kitchen at McDonald’s Highlands in Henderson. A veteran of the culinary industry, Chef Ricardo brings more than 20 years of passion and experience as an executive chef.
“I have worked on the Strip, which I loved, but I wanted to step away from the glitz and connect with the local community,” says Chef Ricardo. “I want to serve classic, Italian comfort food and good wine in a small, intimate setting.”
Start with Antipasti favorites such as Bruschetta and Shrimp Scampi and follow up with Insalata classics like Caesar Salad with fresh, housemade dressing and the Caprese Salad with creamy burrata and heirloom tomatoes.
Pasta dishes will delight with house favorites such as hearty Lasagna Bolognese or Spaghetti with meatballs – guests can bring a touch of Roma to their kitchen with a quart of its freshly prepared sauces and signature meatballs to bring home. Specialties round out the menu with a 14oz Veal Parmigiana, great for two, juicy Pork Chops with cherry peppers or a Sea Bass Oraganta.
Its cocktail program includes innovative drinks such as Smoked Buffalo Trace Old Fashioned blended with bourbon, simple syrup, bitters, cherries, and orange peel. Martinis and other classic cocktails are also available. A full bar with a diverse wine list and craft beers will quench any thirst.

After that he created menus for concepts in Santa Rosa as well as Paso Robles Ca. Back in Las Vegas it was Whist Stove & Spirits, Due & Proper and Itsy Bitsy Ramen and Whiskey. He also had his hand in Beer Park at the Paris Las Vegas before becoming the executive chef at Mastro’s Ocean Club at Aria Hotel and Casino.
