Echo & Rig Ups Their Brunch Game with Delicious New Menu Selections
Chef Sam Marvin is not one to rest on his laurels. While Brunch has always been spectacular at Echo & Rig at his two busy locations in Las Vegas and Henderson, Chef Sam tweaked the menu to make it even better with new menu items that cater to diverse diets.
Echo & Rig, recently launched its new brunch menu at both locations. - This week they are also participating in Restaurant Week (with a 4-course lunch) to benefit Three Square. This Thursday, they are hosting Luke Day: a fundraiser for Canine Companions, who help train service animals.

You say you want a fresh salad or decadent sandwich? No problem! Echo & Rig has got you covered. Caesar, Little Gem, Bibb, Lollipop Kale (all vegetarian) and Mache (Roasted Chicken) and Steakhouse (steak, duh!) make for an embarrassment of riches in the healthy salad department. Chef Sam has always made killer sandwiches and his new Brunch menu features some tried and true classics, like his insane Butcher Blend Burger and the Short Rib Grilled Cheese (swoon!), but all eyes are on the all-new, old-school Monte Cristo, featuring turkey, ham, Gruyere cheese and bacon served on three slices of bread coated with French toast batter and served with Grade-A maple syrup. Wowza! Maybe get one for the table and share?
Steak Frites with Eggs, Huevos Rancheros, NY Egg Sandwich, Steakhouse Scramble, and other yummy egg dishes, Lemon Ricotta Pancakes, French Toast, and a decadent Belgian Waffle round out the menu. For those of us who are counting calories and being good, try the all-new, and equally delicious Farmers Market with two perfect poached eggs, asparagus, beets, pee wee potatoes, haricot vert, portobello mushrooms, cherry tomatoes, goat cheese and extra-virgin olive oil – Five-A-Day on a plate!
