A new restaurant at Bellagio will make its debut in 2027 in the soon-to-be former Le Cirque. Some things never change, and everything changes.

Strolling down memory lane in Las Vegas, where I have lived since 2008:

When I recently read that Le Cirque at Bellagio Las Vegas was closing on Aug. 23 after nearly 30 years on the Las Vegas Strip, two memories popped up on my social media feeds.

In 2016 with my brother Charles Chareunsy, the Snack Wagon Takeover at Harvest by Chef Roy Ellamar at Bellagio featured guest French Chef Wilfried Bergerhausen of nearby French restaurant Le Cirque with the colorful circus decor.

The incredible featured snacks that we enjoyed: Russian Osetra caviar atop Maryland blue crab, corn soup, wild king salmon tartare, foie gras PBJ and charred eggplant puree and beets.

Y’know, just another typical weeknight dinner on the Las Vegas Strip. LOL.

The following March on my birthday: The Forbes Five Star dining tour at Chef Julian Serrano’s Picasso (which closed in 2024 and is now Carbone Riviera), then Le Cirque, to toast Bellagio as the only hotel in the world with two Forbes Five Star restaurants.

Chef Bergerhausen made it an especially memorable dinner with my Twitter (now X) cover photo gracing a thin sheet of chocolate. The normally reserved chef even cracked a smile.

At Le Cirque that evening: John Katsilometes, Leslie Frisbee, Al Mancini, Melinda Sheckells, Nicole Wozniak, Jillian Yavorek, Robert Kachelriess, Scott and Elaine Harris, Mitchell Wiblurn, Amelinda Lee, Jason Harris, Ivan Angelo and more.
