New Dining: Maiz Mama Brings House-Made Tortillas + ‘Simply Mexican’ Flavors to Central Las Vegas

Maiz Mama, a fast-casual concept anchored by handmade tortillas, trompo-roasted meats and scratch-made cuisine prepared in an exhibition kitchen, will debut at 5045 W. Tropicana Ave. on Monday, Aug. 10. To mark its opening, Maiz Mama will treat its first 100 guests to a free burrito, bowl or taco plate and choice of fountain drink or agua fresca when the restaurant opens its doors at 11 a.m. 

Named for the corn at the heart of Mexican cuisine, Maiz Mama in Central Las Vegas will press and cook its tortillas from scratch daily. Proteins including al pastor and chicken will be roasted on trompos, rotating spits that build savory, charred flavor before the meat is sliced. Burritos, bowls, taco plates and salads are custom-made from birria, chicken, steak, pork, vegetables and asada mushrooms.

Beyond the build-your-own menu, Maiz Mama’s dishes lean into Mexican comfort food. Birria ramen (in the main photo) pairs rich consommé with noodles for a cross-cultural bowl and street-food staple. Quesadillas come with house salsa, nachos arrive loaded with melted queso and toppings, and Mexican street corn is finished with a creamy mayo-sour cream blend, queso fresco and house-made sauce.

Starters include chips with salsa, queso and guacamole and rice and beans. House-made agua frescas and Mexican sodas round out the drink menu. The dining room will seat approximately 40 guests across wooden booths and black-and-white marbled tables, with a standing bar and an outdoor patio for as many as 15 more.

A hand-painted mural celebrating Mexican culture and traditional artistic motifs anchors the space and sets the tone for the experience. Maiz Mama will be open from 11 a.m. to 11 p.m. Sundays through Thursdays and 11 a.m. to midnight Fridays and Saturdays. Online ordering will be available through ChowNow, Uber Eats and DoorDash.
