Tivoli Village Spot Will Now Highlight Wines Of The World and Small Plates
Chef James Trees and LEV Group have reopened Ada’s in Tivoli Village as Ada’s Wine Bar, offering wines of the world, accompanied by Spanish and Mediterranean small plates and shareables. Jackson Stamper, formerly of The Kitchen at Atomic in Las Vegas and Employees Only in New York City is Chef de Cuisine. The floor team is composed of accomplished sommeliers including Norman Acosta, Chloe Helfand, Jodie Hellman, Sarah Pamatat and Kat Thomas.
Chosen for their intrigue, value and delight, the innovative wine list includes whites, roses and reds from around the world, categorized by descriptors such as “zesty, bright & aromatic” or “bold, spicy & rich” rather than region or grape. Along with nearly 100 bottle selections (starting at $30), nearly two dozen wines by the glass are offered ranging $9-20. Sparkling wines, sherrys, amaros and beers are also available.
The carefully curated menu is inspired by Chef Trees’ travels around Spain and the Mediterranean, highlighted by iberico chorizo croquetas, octopus patatas bravas, a unique endive salad, and red beet hummus.
Offering indoor and outdoor seating, Ada’s Wine Bar has a fresh look including kitchen-facing wraparound wood bartop, tufted banquettes and hightop group tables.
“Some of the best wine experiences I’ve ever had were in the simple tapas bars of San Sebastian, or enotecas in Italy,” says Chef Trees. “Without being too bound by tradition, that’s the spirit we are trying to bring here, with an amazing team. But at the end of the day, it’s just a casual place to meet for a glass and a bite, with friends, family or a date.”

MEET THE TEAM
Chef Partner James Trees
Born and raised in Las Vegas, NV, Chef/Partner James Trees’ culinary career began as a teenager at the Mirage Hotel & Casino on the Strip prior to attending the Culinary Institute of America, then rising through the ranks under chefs including Michael Mina, Bradley Ogden, Eric Ripert, Heston Blumenthal, Akasha Richmond and Ray Garcia. He opened multiple restaurants across the US as Corporate Sous Chef for the Mina Group, and spent several seasons behind the scenes with Gordon Ramsay on Kitchen Nightmares and Hell’s Kitchen. His first independent restaurant, Esther’s Kitchen, offering seasonal Italian in the Downtown Las Vegas Arts District, has become a local and tourist favorite within three short years. Trees has followed that with concepts exploring Mediterranean, small batch ice cream, and craft sandwiches. Adding to a number of local accolades, in 2020, Chef Trees was named a Finalist for the James Beard Award: Best Chef Southwest.
Chef de Cuisine Jackson Stamper
Two decades of experience in the restaurant and bar business have given Jackson Stamper an uncommon level of experience in a variety of locales, from his native Orlando to Philadelphia, New Jersey, New York City, where he was Executive Chef at the legendary Employees Only, and finally Las Vegas, where he made his mark at The Kitchen at Atomic before jumping at the opportunity to work with Chef Trees and the Ada’s Wine Bar team.
The Wine Team
A graduate of Le Cordon Bleu, San Francisco, Norman Acosta has pulled corks at db Brasserie (Daniel Boulud), Rivea (Alain Ducasse) and NoMad Hotel (Daniel Humm) among other esteemed Las Vegas Strip restaurants. He holds an Advanced Sommelier certification from the Court of Master Sommeliers.
Prior to Ada’s, Chloe Helfand was wine director at La Cave at Wynn, opened Lakeside at Wynn and Mott 32 as well as SLS Las Vegas where she rose to lead sommelier at Jose Andres’ Bazaar Meat (and the entire hotel). Her certifications include: WSET Level 1 Award In Sake; Certified Sherry Wine Specialist; Certified Sake Professional; Certified Sommelier, Court of Masters; The Wine Academy of Spain Academy of Spirits.
Hailing from Philadelphia, Jodie Hellman has worked as sommelier at restaurants by Chefs including Wolfgang Puck, Daniel Boulud, Tom Collichio and Bobby Flay and others at the Wynn and Caesars Palace resorts. She loves to travel for wine study, having worked harvest in Burgundy and visited Italy extensively, as well as educati and judging. She holds a Level Two Sommelier certification from the Court.
Sarah Pamatat is a veteran of the esteemed wine program at the Bellagio resort, in addition to Wolfgang Puck restaurants, and like her colleagues has opened bottles for a who’s who of elite celebrities and other esteemed guests. The Upstate New Yorker holds a level 2 certification from the CMS as well as a Sake certification from John Gautner.
Kat Thomas has also worked at the Bellagio resort as well as Aria on the Strip, as well as restaurants by Michael Mina and Sirio Maccioni while forming her own company, CORE Body | Mind, a platform for promoting wellness in the beverage industry. She is an Advanced Sommelier with the CMS and also holds the WSET Level 2 Professional Certificate in Wine & Spirits, is a Spanish Wine Scholar & Educator with the WSG, as well as specialist certifications for sherry and sake.
