Fresh for summer 2024, Chef de Cuisine Jackson Stamper, Chef/Partner James Trees and team have created some incredible dishes that we humbly feel puts petite Ada’s at the top of the Vegas restaurant game. Experience these flavors and tell us we’re wrong!
Some of the highlights we’re most excited about include:
- Bay Scallops with cold corn panna cotta, jalapeno, lime & cilantro
- Mussels with coconut, yellow chile, ginger, cilantro & onion
- The return of their famous Corn Ribs with Tajin butter, aji verde and cotija
- Argentinian Lamb Ribs in a red wine & cola glaze with pecorino & mint
- Braised Rabbit Tagliatelle with paprikash and parmigiano reggiano
- Blueberry Cheesecake with apricot, elderflower and shortbread crust
- White Chocolate Tart with roasted pistachio butter, matcha coulis
Pair these with the incredible Wine Spectator Award Winning (we love saying that) selections by Wine Goddess Kat Thomas, and…game over!
Chefs Jackson & James are ably assisted by Sous Chef Mick Skarda and Pastry Chef Stephanie Gonzalez. It’s a solid team we’d love to have you know better.

Offering indoor and outdoor seating, Ada’s Food + Wine has a fresh inviting atmosphere including kitchen-facing wraparound wood bartop, tufted banquettes and hightop group tables.
Ada’s has received myriad accolades both local and national, including most recently recognition from Wine Enthusiast as one of the Top 50 wine restaurants in the US.
