In celebration of Mother’s Day, Pancho’s Mexican Restaurant, located in Downtown Summerlin, will treat moms to complimentary champagne on Sunday, May 9.
All moms will receive champagne with the purchase of an entrée during brunch hours from 10 a.m. to 3 p.m. Signature brunch items include the “Ultimate Breakfast Burrito,” mixed with scrambled eggs, diced ham, roasted potatoes, onions, chiles and tomatoes, all stuffed in a flour tortilla and topped with Pancho’s special Spanish sauce, garnished with sour cream and sliced avocado; and “Huevos Rancheros,” a soft corn tortilla topped with two fried eggs and covered with a creamy sauce of Jack and Cheddar cheeses, and then topped again with sour cream and sliced avocados, served with Mexican-style Rice and beans.
