Executive Chef Nicole Brisson launches Sunday brunch service at Brezza this spring
Brunch at Brezza kicks off Sunday, May 1, and continues every Sunday with featured live entertainment by Christina Amato accompanied by a dynamic jazz trio. The illustrious vocalist, songwriter, and entertainer is familiar to those who have dined in supper clubs on the Strip, and will offer a diverse playlist including, but not limited to Etta James, Amy Winehouse, Ella Mai, Bruno Mars, Adele, Alicia Keys, Imagine Dragons, Fleetwood Mac, and more.
“There aren’t a lot of patios on Las Vegas Blvd that offer an elevated experience with live entertainment, and Chef Nicole is bringing incredible spring produce in from our farmers that we also incorporate into our brunch cocktails” says Jason Rocheleau, VP and Managing Partner. “We’ll also feature two Aperol Spritz Lounges, one indoor and one outdoor, for locals and tourists alike to relax and enjoy the libations and live music.”
Brunch will be served in the dining room and on the expansive olive tree-lined patio featuring views of the Las Vegas Strip and coastal Italian favorites with modern twists. To start, items from the ocean include a show-stopping Shellfish di Giorno tower with raw and cured shellfish and seafood with a selection of house sauces; a full raw bar, Chilled Octopus Salad with squid ink crackers, Daily Oysters, and Big Eye Tuna with preserved Meyer lemon and espelette.
Antipasti options include Chef’s Salumi & Italian Cheese with pickled vegetables, olives, and conserva; assorted Fresh-Baked Pastries; a decadent Caviar Gnocco Fritto with creme fresh, chive and shallot; Tuscan Beef Tartare with Creekstone filet, lemon, and capers and Brezza’s signature Heirloom Tomato with Buffalo mozz, basil pesto, and grilled crostini.
One would be remiss to pass on Chef Nicole’s handmade pasta, and the options available at brunch won’t disappoint. Guests can enjoy the Salt-Roasted Potato Gnocchi with fennel sausage and arugula-basil pesto; Cappellaci “Oreganata” with cauliflower, spinach, and capers; Spring Pea Agnolotti with preserved Meyer lemon, morels, and porcini; and a Lumache Bolognese with a veal, beef and pork ragu and Parmigiano Reggiano.
Entree highlights include the Frittata with Fiore di Latte, candied tomatoes, and prosciutto; a Farmhouse Tart with sausage, mushrooms, walnuts, and Fontina cheese; Housemade Waffles with bramble syrup and mixed berries; Zucchini Crepes with fresh mozz, basil, and tomato; Piedmontese Steak & Eggs featuring grilled Flat Iron, smashed fried potatoes, sunny side up eggs and tomato jam; and a Mortadella Melt, Dry-Aged Burger and Milanese Sandwich served with Jidori chicken, basil aioli peperonata and house chips.
The brunch-inspired beverage program delivers mocktails, cocktails, and an impressive build-your-own mimosa and bellini presentation served with sparkling options of varying price points – Gambino Prosecco ($39), Borgoluce Prosecco ($85), Gosset Grand Reserve Brut Champagne ($188), and Dom Perignon Brut Champagne 2010 ($650) alongside fresh-squeezed orange juice, white peach, and passionfruit purees, plus seasonal farmer’s market fruit and berries for garnish. A selection of Aperol Spritz’s pair perfectly with the Italian brunch fare, and Brezza proudly pours Diane Mina’s Garden Grown Blends, an artisanal bloody mary mix that sets the standard for savory brunch boozing and pairs perfectly with vodka, gin, tequila, or bourbon.
