Michelin-Starred Chef Shaun Hergatt’s Latest Restaurant Concept Made its Official Debut on Friday, Dec. 3
Michelin-starred chef Shaun Hergatt’s Caviar Bar officially opened its doors to guests at Resorts World Las Vegas on Friday, Dec. 3, 2021. With a dynamic menu of fresh seafood dishes that incorporate seasonal ingredients, in addition to international caviar selections, Caviar Bar’s luxe interior and intimate atmosphere makes it a true jewel box within the Las Vegas Strip.
“I’m excited to enhance and support the Las Vegas culinary scene, and look forward to welcoming our guest,” said Executive Chef and Owner Shaun Hergatt. “Whether it’s a night out to celebrate a special occasion or a casual social outing, we have an experience for everyone.”
As the centerpiece of the restaurant, the caviar offerings provided by Chef Hergatt’s Caspy Caviar include proprietary world-class selections of Kaluga, Golden Ostera and Classic Sevruga, served with house-made blinis, crème fraiche and chives. Guests can choose to order a tin to start or incorporate the caviar into the rest of the menu.
The menu begins with a selection of house-cured meats such as premium Jamon Iberico, Culatello and Prosciutto, along with a selection of fine cheeses: Brie, Jasper Hill Bayley Hazen Blue, Taleggio and Comte Saint Antoine.
Fresh seafood dishes include Oysters with shallot and mignonette sauce; Gulf Shrimp Cocktail; and Maine Lobster with lemon and Marie Rose sauce; in addition to tartare and crudo offerings such as Diver Scallop with caviar and a yuzu vinaigrette; Japanese Hamachi with shio kombu and satsuma; and Bluefin Toro with ginger dressing, wasabi, and chive. Bites include Savory Baby Waffles topped with smoked salmon, crème fraiche and caviar; Wagyu Beef with black olive and caviar; and Shrimp Toast featuring caviar sauce.
Large plates consist of Handmade Gnocchi with beurre monte, parmesan and chives; Cauliflower Risotto with smoked sturgeon and parmigiano; Atlantic Salmon featuring potato puree, Meyer lemon and pink peppercorn; and Australian Wagyu Beef served with miso-butter and Japanese mushrooms. Conclude the meal with a decadent dessert including Tahitian Vanilla Bean Panna Cotta topped with raspberries; Dark Chocolate Cake with ganache and a gold leaf; and the signature Caviar Ball with blackberry and sweet cheese.
Guests can pair these menu items with a selection of Champagne, wine and signature cocktails.
In close collaboration with Chef Hergatt and team, celebrated designer Roman Vnoukov translated the visuals of Caviar Bar with Russian influences throughout the luxurious interior and exterior. The restaurant’s sleek design features a chic color scheme of dark colors with hints of silver and bronze, while the exterior and bar area’s walls are comprised of vibrant diamonds. With 105 seats, the restaurant is an intimate experience.
