In celebration of Fourth of July, Pancho’s Mexican Restaurant, located in Downtown Summerlin, will offer a limited-edition cocktail and happy hour specials on Sunday, July 4.
Available exclusively during the holiday, Pancho’s will introduce the “Berry American” cocktail, crafted with raspberry vodka and pureé, house made simple syrup, soda, and a float blue curaçao, garnished with sparklers and a cherry on top, priced at $10.25
Happy hour specials will be offered in Pancho’s cantina, where select appetizers, house and flavored margaritas, well cocktails, and house wines will be $3 off from 11 a.m. to 7 p.m. Additionally, Pancho’s will host its weekly Tequila Night from 3 to 9 p.m. Home to over 40 tequila selections, including Don Julio 1942, Jose Cuervo Reserva De La Familia and Gran Patrón Platinum, among others, Pancho’s offers half-off tequila pours every Sunday.
Additional favorites for Fourth of July include Pancho’s Nachos, made with toasted corn tostaditas, layered with beans, covered in cheddar and Jack cheeses, and topped with diced tomatoes, jalapeños, sour cream and guacamole; Steak Picado, crafted with chunks of flat iron steak, sauteed with green peppers, onions and tomatoes, and seasoned with special herbs and spices, smothered in melted cheese, and served with Mexican-style rice and beans with hot tortillas; and Tacos de Pollo Asado, including two corn tortillas filled with strips of seasoned grilled chicken breast, lettuce, shredded cheese and pico de gallo.
