About Oysters Rockefeller
Oysters Rockefeller is a classic American dish that originated in New Orleans at Antoine’s Restaurant in 1899. It features oysters on the half shell, topped with a rich mixture of green herbs, butter, and other ingredients, then baked or broiled until the topping is golden and bubbly.
The exact original recipe remains a closely guarded secret, but it typically includes ingredients such as spinach, parsley, green onions, butter, garlic, and breadcrumbs. Some variations also incorporate Pernod or another anise-flavored liqueur to give it a distinctive taste.
Here’s a basic recipe for Oysters Rockefeller:
Ingredients:
- 24 fresh oysters, shucked and on the half shell
- 2 cups fresh spinach leaves, finely chopped
- 1/2 cup finely chopped parsley
- 1/2 cup finely chopped green onions (green parts only)
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup melted butter
- 2 tablespoons Pernod or another anise-flavored liqueur (optional)
- Salt and pepper to taste
- Rock salt for baking
Instructions:
- Preheat the oven: Preheat your oven to 450°F (230°C).
- Prepare the filling: In a large bowl, combine the spinach, parsley, green onions, garlic, breadcrumbs, Parmesan cheese, melted butter, and Pernod (if using). Mix well until all ingredients are fully incorporated. Season with salt and pepper to taste.
- Prepare the oysters: Spread a layer of rock salt on a baking sheet to keep the oysters steady. Arrange the oysters on the rock salt.
- Top the oysters: Spoon the spinach mixture evenly over each oyster.
- Bake the oysters: Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the topping is golden and bubbly.
- Serve: Serve the oysters hot, garnished with lemon wedges if desired.
Enjoy your Oysters Rockefeller!
