Legendary chefs David Chang, Jean-Georges Vongerichten and Michael Mina unite with esteemed winery and Buffalo Trace Distillery to host exclusive dinner event March 18
Bellagio Resort & Casino will be the epicurean epicenter of Las Vegas when award-winning chefs David Chang, Jean-Georges Vongerichten and Michael Mina collaborate with Château Margaux and Buffalo Trace Distillery to host an exclusive, one-night-only dinner experience at Le Cirque on March 18.
The intimate dining event will feature superstar chef talent, limited edition spirits tastings, world-class winery pairings and special surprises, all presented at the luxury resort destination.
“To unite culinary icons from around the globe for a culinary journey that is educational, fun and interactive is in Bellagio’s DNA,” said Bellagio Vice President of Food & Beverage Josef Wagner. “These talented chefs and beverage professionals are consistently recognized individually for their creativity, skill and passion in all they do. Bringing them together for this very special night will ‘wow’ guests and deliver a series of unforgettable moments.”
Château Margaux Deputy Managing Director Alexis Leven-Mentzelopoulos, in partnership with MGM Resorts Executive Director of Wine and Master Sommelier Douglas Kim, will guide guests through wine pairings from the renowned estate, known around the world for its history, elegance and prestige. The luxurious winery boasts ‘collector’s wines’ and consistently receives high scores from wine critics and industry professionals alike after more than 300 years in the winemaking business. In celebration of this special event, Château Margaux is inviting guests of the dinner to an exclusive and in-depth visit of the estate grounds and winery, including the historic 19th century wooden tank room, barrel cellars and traditional cooperage, as well as the new cellar and wine library, designed by award-winning architect Lord Norman Foster. The private tour will be followed by a tasting of select vintages from Château Margaux’s private collection.*
The lavish wines will be complemented by a five-course menu from James Beard and Michelin star chefs David Chang of Momofuku at The Cosmopolitan of Las Vegas, Jean-Georges Vongerichten of Prime Steakhouse at Bellagio and Michael Mina of his eponymous restaurant, Michael Mina Bellagio. The unprecedented collaboration will unite the three all-star chefs as they showcase exquisite culinary presentations using the finest meat, seafood, vegetable and fruit products of the season.
The evening program will include:
- 5:30 p.m.: Welcome Reception at Bellagio Terraza
Guests will check-in at Bellagio Terraza for a private Bellagio Fountains show experience; passed canapes of Ko Burger with Foie, Chickpea Uni and Tuna Foie created by Chef David Chang; and a pour from a methuselah bottle (6L) of 2002 Louis Roederer Cristal for a celebratory toast.
- 6:30 p.m.: Dinner at Le Cirque
Following the toast, guests will be escorted to Le Cirque where they will be seated in the dining room and greeted by the evening’s distinguished chefs and beverage industry icons. Wines poured throughout the evening will be served from 750ML, 3L, and Magnum formats, ideal for maintaining delicate notes and beauty of the aging process. The menu will include:
- First Course: Seafood Plateau Royale, featuring Norwegian King Crab Leg, Spot Prawn, Sea Urchin and Kaviari Caviar (presented by Jean-Georges Vongerichten)

- 9:30 p.m.: Buffalo Trace Tasting at Le Cirque
At the conclusion of dessert, Buffalo Trace Master Blender Drew Mayville will guide guests through a high-end bourbon whiskey tasting, which includes O.F.C. vintages from 1993, 1994, 1995 and 1996. Named after Buffalo Trace’s Kentucky distillery, which was originally christened the Old Fashioned Copper (O.F.C) in 1870, each release in the series showcases the oldest and best barrels of yesteryear and are highly coveted among collectors. In addition to O.F.C. tastings, two other one-of-a-kind whiskies will be presented during the experience.
