The new concept features Italian comfort classics from A to V…that is, from Antipasto to Veal Parm and everything in between!
As Rampart Casino continues to celebrate more than two decades of serving the Summerlin and Las Vegas areas, Vice President and General Manager Michelle Bacigalupi announced a new culinary addition. Spiedini Fiamma Italian Bistro, will open Wednesday, Oct. 5 at 5 p.m.
“We are really excited to welcome our customers to a completely reimagined space and we are thrilled to welcome back Chef Paula Smagacz who has created a delicious menu that will transport our guests to a neighborhood bistro in Italy with each bite,” said Bacigalupi.
Set in the main Promenade connecting Rampart Casino to the JW Marriott Las Vegas, Spiedini Fiamma brings a very coastal vibe to the property with shades of blue and curves mimicking waves throughout the design, light-colored marble and quartz counters which line the bar and tabletops, sand-colored stacked stone and light tiles that adorn entryways and accent areas, and lush blue velvet banquettes to bring the sophisticated color palette together. Paying homage to “fiamma” in the name, flame-element features throughout, including firepits on the patio and of course, an open kitchen, add to the overall vibe.
Above the open kitchen, a beautiful coastal mural by local artist Anne Marie Vadala, gives diners a feeling of being in an Italian cafe. Continuing the tradition of beautiful outdoor spaces on property, Spiedini Fiamma is no exception with a wraparound outdoor patio spanning more than 1,400 square feet surrounded by lush greenery, waterfalls, and koi ponds.
More than a decade ago, Chef Paula Smagacz was part of the property team working as a chef in banquets, and since then she’s cooked in kitchens from high-end hotels, revamped the culinary program at Santa Anita Park racetrack, and most recently held the role of Chef de Cuisine at The Ritz-Carlton on the island of St. Thomas.
Now serving as Room Chef for Spiedini Fiamma, Chef Smagacz has created a robust menu of Italian staples that give the feeling of being in an Italian neighborhood cafe. Highlighted small plates include the Saffron Mussels with saffron broth, lemon zest and fresh oregano; the Meatballs with red sauce, ricotta, and a grilled crostini; and the Beef Carpaccio with capers, shredded egg, arugula, and parmesan. Entrees and House Made Pasta options include Chicken Marsala with mushrooms, Marsala wine, demi, and capellini; Veal Parmesan with tomato sauce, mozzarella, basil, and parmesan served with spaghetti; Braised Short Rib with cheese polenta, carrot, rib jus, and broccolini; Bucatini Carbonara with prosciutto, peas, egg yolk, parmesan cream and parsley; Lobster Ravioli with tomato cream sauce; and Risotto Primavera with spinach, portabella, square, zucchini, tomato, peppers, and parmesan.
The Seafood Frutti di Mare with clams, mussels, shrimp, calamari, and squid ink pasta and the Catch of Day are two highlights of the Seafood section. A pizza oven in the open kitchen will provide piping hot Americano-style pizzas including the Calabrian Pepper & Sausage with mozzarella, oregano, Calabrian peppers, and pecorino; and the Prosciutto & Fig with arugula and parmesan cream sauce.
On Sundays and Mondays, diners can enjoy the Family-Style Gravy Pot (serves two – three), featuring meatballs, sausage and short ribs cooked slowly in gravy with roasted peppers and greens and roasted garlic, and a choice of House Made pastas – rigatoni, spaghetti or fettuccine.
Spiedini Fiamma’s rich bar area serves customers from both inside and from the indoor patio area where diners can sip from an extensive list of $35 Italian wines, as well as a list of Reserve Wines. The spirits program features hand-crafted cocktails including plays on Italian classics such as the Limoncello Martini and Aperol Spritz, or choose from signature cocktails like the Smoked Montenegro Manhattan (Maker’s Marb Bourbon, Montenegro Amaro, Carpano Antica Vermouthor) and the Sicilian Negroni (Malfi Italian Gin, Carpana Antica Vermouth, Sicilian Blood Orange Liqueur).
A vast selection of draft, local, and Italian beers will also be served. Adding to the $5 Happy Hours throughout the casino-resort property, including Jade Asian Kitchen & Noodles and Hawthorn Grill, Spiedini Fiamma Happy Hour launches Oct. 23 and runs Sunday through Thursday from 4-6 p.m. featuring drinks, bites, and wines by the glass starting at $5.
Spiedini Fiamma also features a private dining room, as well as semi-private patios that can accommodate between 16 and 50 guests for weddings, business meetings, receptions, and more.
