Southern Highland’s Newest Mediterranean Concept Brings the Heat with Craft Hookah, DJs, Shareable Bites, Signature Cocktail Program and More
Turn the night up to 11, starting at 10. Pine Bistro, the new Southern Highlands Mediterranean dining experience from AYYA Hospitality, has expanded its late-night offerings. Beginning nightly at 10 p.m., the space transforms into a lively lounge atmosphere with beats by local Las Vegas DJs, a premier craft hookah program and small bites to pair with signature cocktails.

“Living off the Strip shouldn’t limit the quality of your Las Vegas nightlife options,” said Lowell Raven, partner and Vice President of AYYA’s global operations and brand experience. “Pine Bistro brings an exciting new addition to the Southern Highlands community, providing a space for everyone to indulge in delicious food and craft hookah, socialize among talented artists and have an overall great night.”
Setting the tone for the night, Las Vegas-based DJs take to a custom-designed booth to emulate the sounds of Mykonos and Mediterranean nightlife. Guests can dance their way to the lounge and patio seating areas, where they are invited to try Las Vegas’ first curated craft hookah program. Pine Bistro offers a classic hookah experience with traditional smoke blends such as Double Apple, Peach Ice and Vanilla. To elevate the experience, guests can personalize their hookah vase by substituting traditional water for spirits with offerings like Watermelon Mojito, Boozy Berry, or opt for a mocktail like the Island Jams.
The restaurant’s dining menu takes a new form during the late-night hours. Although the complete dinner menu is not offered at this time, the late-night selection maintains the classic tasting profiles of the Mediterranean. Guests can order exclusive bites such as the Pine Sliders, Bistro Wings, Falafel Wrap and more lounge-style dishes. To pair with the meal, a variety of craft cocktails – with traditional Mediterranean and Lebanese flavors, including orange blossom, sumac, fig, arak and more – are available.
Pine Bistro offers a rich selection of Mediterranean and Lebanese cuisine, curated to celebrate the region’s flavors, culture and nightlife. Within the 3,500-square-foot interior, guests can enjoy the ambiance of the main dining area with open kitchen views, a stylish bar and a lounge adorned with design elements inspired by the Mediterranean.
