The approachable take on a luxurious delicacy marks Chef Hergatt’s first West Coast venture
This December, Resorts World Las Vegas is set to welcome Caviar Bar, a new restaurant concept from Michelin-starred chef Shaun Hergatt. With a focus on fresh seafood selections, such as organic salmon and fresh tartars and an approachable take to world-class caviar, the restaurant’s wide-ranging menu will also feature Wagyu beef, shareables and rich desserts as well as a variety of wine, champagne and vodkas. The restaurant will officially open its doors to guests on Friday, December 3, 2021.
Caviar Bar will exclusively feature Chef Hergatt’s personal brand, Caspy Caviar, where fine selections such as Baerii, Kaluga, Golden Russian Ossetra and Sevruga will be available for wholesale in addition to sampling in select dishes. The expansive menu also includes a wide-ranging list of dishes to serve every guest’s taste.
“When I originally conceptualized Caviar Bar, I envisioned a hidden jewel box within the Las Vegas Strip for locals and tourists alike to enjoy an amazing meal,” said Executive Chef and Owner Shaun Hergatt. “Caviar Bar is just that. Whether you prefer a caviar-centric dish or simply a beautiful cut of salmon, the restaurant offers an immersive social setting for people to meet, have a drink and mingle.”
With modern design elements that create a luxurious setting, Caviar Bar features an aesthetically pleasing color scheme of black, white and hints of gold. Designed by celebrated designer Roman Vnoukov, the restaurant’s intimate atmosphere seats 105 guests and offers an upscale setting ideal for celebrating a special occasion or enjoying a social dinner. The restaurant’s Russian influences are seen throughout the space’s patterned fabric-covered walls, diamond-guided doors and elegant bar top. Caviar is playfully present throughout the venue’s décor, with the ceiling hosting a stunning hand-blown glass piece nodding to the restaurant’s namesake.
