Chef Sam Marvin has always strived to share his love of good food and quest for quality products with his treasured guests. He prides himself and his team on searching the world over for the best, most delicious cuts of meat that are ethically sourced and environmentally friendly to serve in his three locations of Echo & Rig, as well as available for purchase in two Echo & Rig butcheries in Henderson and Summerlin.
Chef Marvin implicitly understands that the cut of the meat on the plate must stand on its own. It’s all about the product. His masterful cooking – sauces, sides, and techniques – always complement, never cover up the star ingredient.
It takes a confident chef to share his knowledge, passion and cooking secrets with his customers, but Chef Marvin has always been an open book. He wants his guests to have as good of an experience at home as they do in Echo & Rig.
What started off as Butcher in a Box has evolved into Passport Culinary, a quarterly, subscription-based box of global deliciousness delivered to your home kitchen complete with six of Chef Marvin’s tested seasonal recipes.
Each box is $225.00 featuring five to eight separate cuts of meat. Let’s start with the Summer 2023 box, which is now available until September 25th. Enjoy two cuts (8 oz. each) of flavorful rich Creekstone Farms Black Angus Skirt Steaks from Arkansas City, Kansas.
Next up is a 1.5 lb, 8-bone Gund Agai rack of lamb from New South Wales. Iberico pork, anyone! A 2-lb, 4-chop pack of Spain’s best pork chops from Campo Grande in Iberico, Spain are ready for the grill.
For the ultimate burger try 2 lbs. (4 ½ lb. patties) of Mishima Reserve F1 Wagyu patties from Washington State.
