Peyote, Las Vegas’ first live-fire restaurant, has introduced several new selections by Executive Chefs Daniel Arias and Isidro Marquez-Castillo, in addition to seasonal cocktails.
Prepared with fresh flavors and ingredients, the new dishes and drinks are available now at Corner Bar Management’s elevated Las Vegas restaurant, located in the eclectic Fremont East community at 1028 Fremont St.
Reflecting the restaurant’s from-scratch cuisine with Latin influences, new selections include the agua suave fish ceviche, made with the chef’s choice of fish for the day, epazote lime dressing, onions, tomato, avocado, cucumber and salsa bendita; a seven-ounce prime flat iron steak, served with cheese-stuffed Anaheim chile and grilled green onions; and roasted cauliflower steak coasted in a citrus herb marinade and Mexican romesco sauce, topped with pickled onions and dried cherries. Highlighting summer flavors and ingredients, Peyote’s new cocktails include the Guavacito, made with rum, Cocchi Americano, guava, hibiscus, lavender and lime; Yellow Polka Dot Bikini made with gin, mahina coconut, jackfruit, hoja santa, pink peppercorn and tonic; and Dilly Wabbit, made with dill-infused 400 Conejos mezcal, carrot, lemon and aquavit; among others.

Peyote is open for dinner from 5 p.m. to 10 p.m. on Thursday, Friday and Saturday; as well as for brunch from 11 a.m. to 3 p.m. Friday and Saturday and from 10 a.m. to 3 p.m. on Sunday.
