Pancho’s Mexican Restaurant to Ring in 2022 with Two-Day Fiesta

Pancho’s Mexican Restaurant, located in Downtown Summerlin, will kick-off the New Year with a festive countdown on New Year’s Eve, Friday, Dec. 31 and brunch specials on New Year’s Day, Saturday, Jan. 1.

Pancho’s New Year’s Eve celebration will feature a champagne toast at 9 p.m. for a festive east coast countdown. The full dinner menu will be available throughout the night, offering dishes such as the chimichanga del Mar, sopes mexicanos and enchiladas de mole, along with their signature cocktails like the Naughty Maggie and cucumber jalapeño margaritas.

The fiesta will continue New Year’s Day with brunch specials including the Bloody Maria, a Mexican twist on a classic Bloody Mary and dishes such as huevos rancheros, chilaquiles verdes, and the ultimate breakfast burrito. Brunch will be available from 10 a.m.
