The summer heat is still in full force, and visitors and locals alike can cool down at critically acclaimed Chef Ray Garcia’s (Broken Spanish) latest Mexican restaurant concept ¡VIVA!, located within the new Resorts World Las Vegas.
¡VIVA! houses an exceptional bar to complement Garcia’s innovative, modern Mexican cuisine. Inspired by the famed Mezcal bars in Oaxaca, Mexico, ¡VIVA! features an indoor promenade patio with a large outdoor dining space, a private dining room, and an expansive bar and lounge.
Guests can enjoy a Mexican-inspired beverage program overseen by veteran mixologist Michael Monrreal, headlined by creative cocktails merging traditional Mexican ingredients with modern twists, nearly 50 tequilas and mezcals, and wine varietals from Valle de Guadalupe (otherwise hard to find in the US).
House-Made Ingredients – Several beverages at ¡VIVA! incorporate cleverly cultivated components made in-house including:
- New Old Fashioned – House-made Aztec spiced tea syrup is blended with Cynar, a sugar agent, to highlight the tequila base in a riff on the traditional Old Fashioned that’s made with bourbon.
- Hibiscus Cooler – Spiced Jamaica – hibiscus tea – prepared in-house is utilized in this refreshing cocktail as well as the Roja Sangria.
- Welcome to the Jungle – One of Monrreal’s favorites on the menu – a tropical cocktail with a Mexican spin – uses guajillo-chile grenadine, made by steeping the spicy chiles in the sweet syrup for an unexpected kick.
- ¡VIVA-Rita! – The House Margarita – The restaurant makes its own salt air foam using lime, water, salt, and agar, then whips it to create a light, creamy topping for the traditional tequila-based cocktail.
¡VIVA! Flight – Served in a limited capacity, the flight consists of five margaritas including the ¡VIVA-Rita! and four exclusive flavors – Spicy Cucumber, Watermelon, Passion Fruit, and Mango – for guests wanting a full margarita experience.
Tequila and Mezcal – Dedicated to Mexico’s iconic agave, the bar is home to many varieties of Tequila and Mezcal, from familiar brands like Casamigos and Don Julio to boutique producers such as Don Abraham, Don Fulano, and Tequila Ocho.
Wine, Beer, and Sangria – ¡VIVA! features an extensive list of Mexican craft beers on tap and wine from a variety of vineyard-heavy regions in Mexico, California, Spain, and France, also used to concoct house-made Roja and Blanco Sangria.
