Curious cocktail lovers turned out for a taste of award-winning mixology at Fontainebleau Las Vegas’ Azul bar and lounge
Fontainebleau Las Vegas has once again demonstrated its commitment to collaboration and luxury hospitality by hosting the award-winning team from New York City’s iconic Overstory for a one-night-only pop-up mixology experience at Azul.

The resort’s agave-driven bar and lounge provided the perfect backdrop for culinary stars like Chef Emeril Lagasse, Chef Avish Naran, and Chef Christof de Lellis to mingle with Academy Chairs and Tastemakers from World’s 50 Best Restaurants.
Overstory’s Bar Director Harrison Ginsberg and Fontainebleau Las Vegas Director of Beverage Development Juyoung Kang worked together to create an impressive lineup of original cocktails.
“Like the perfect cocktail, this was the fusion of key ingredients, and it was an absolute pleasure hosting Harrison and Overstory at Azul,” says Kang. “Events like these allow us to experiment and expand our knowledge of mixology while offering guests a unique, once-in-a-lifetime tasting experience that they can only get at Fontainebleau Las Vegas.”
The event, held from 4 p.m. to 8 p.m., saw chefs, industry influencers, international talent, and media enjoying live music from DJ Shadow Red and hors d’oeuvres from the Fontainebleau Las Vegas culinary team, including a live carving station with Jamón Iberico Pata Negra.
Some of the creative cocktails shared at the pop-up included the Jade Rabbit with green chili and Shiitake mushroom infused Tequila Casa Dragones Blanco; Dark Horse with coconut-washed tequila; Valencia featuring mezcal, amaro, sour lime cordial, and bitters; and 9th Island Highball made with mezcal, pineapple liqueur, and allspice dram from Juyoung Kang. Harrison Ginsberg presented Pink Tuxedo with Haku Vodka, Pisco, and Cherry Blossom Vermouth; In The Clouds with scotch, earl grey tea, and clarified milk; Terroir Old Fashioned with toasted palo santo infused reposado tequila; and El Bandito with Tequila Casa Dragones Blanco and a tomato water and green yuzu cordial.
“We couldn’t have asked for a better stage to bring together our shared love for handcrafted cocktails,” says Ginsberg. “Juyoung is an incredible talent and partner, and Fontainebleau Las Vegas epitomizes the spirit of excellence and artistry that drives us at Overstory.”
Overstory was recently named the #3 Best Bar by 50 Best Bars North America 2024 and was named the #17 Best Bar by 50 Best Bars in the World 2023.
Azul is open nightly from 5 p.m. to 3 a.m.
