Delmonico Steakhouse, from Chef Emeril Lagasse, is one of the only original restaurants at The Venetian Resort since the property opened 25 years ago.
On Friday, May 3, Chef Lagasse and the Delmonico team hosted guests for a cocktail reception to celebrate the milestone, followed by an intimate wine dinner.
Guests were welcomed by the music of the Shea Marshall Jazz Trio and a glass of champagne as they entered the lounge. Throughout the evening, guests were treated to a variety of bites and libations, some of which were inspired by the opening day menu in 1999, including Emeril’s BBQ Shrimp and Brandy Cured Foie Gras.
Guests were wowed at the center of the room by a massive steak-shaped cake complete with a cake “baked potato” from Carlo’s Bakery by Cake Boss Buddy V.
“This celebration marks 25 years since we opened the doors to Delmonico Steakhouse here at The Venetian,” Chef Lagasse said. “I’m incredibly grateful for our amazing team. Without their hard work and dedication, we would not be here. To our loyal guests, we are proud to have served you for a quarter century and look forward to continuing to grow the Delmonico Steakhouse legacy in Las Vegas.”
Delmonico Steakhouse has garnered recognition as one of Gayot’s Top 10 Craft Cocktail Bars nationwide and has proudly maintained Wine Spectator’s prestigious “Grand Award” for its wine list for more than 15 consecutive years, featuring an impressive array of 2,300+ selections.
Delmonico will continue celebrating the milestone with exclusive anniversary cocktails. Lead mixologist Erik Kluever has curated riffs of New Orleans classic cocktails — Vieux Carre, Sazerac and French 75 — that will be served in an engraved commemorative glass:
- A Westward View, made with Emeril’s Westward single malt, cognac, sweet vermouth, Benedictine, aromatic bitters and Orleans bitters, and is garnished with a lemon peel
- The Rarefied Sazerac, made with Emeril’s Rare Character rye, smoked maple syrup, aromatic bitters, Pychaud’s Bitters and an Absinthe rinse with a lemon peel garnish
- Weller 125 Grapeshot, made with Emeril’s Weller Full Proof, L’aperitivo Nonino, grapefruit, lemon, simple syrup, grapefruit bitters, and topped with sparkling wine and a dehydrated grapefruit
In addition to the specialty cocktails, Chef de Cuisine Ivan Rojas will feature special dishes throughout the remainder of the year, inspired by the original 1999 menu.
The menu at Delmonico goes far beyond the ordinary steakhouse, featuring a distinctive array of seasonal fresh seafood appetizers and entrees, alongside other proteins such as chicken, pork and lamb. Guests can also savor Lagasse’s signature dishes, such as Emeril’s New Orleans Barbecue Shrimp, and renowned desserts, such as Emeril’s Banana Cream Pie. For those looking for a dining experience to remember, Delmonico Steakhouse offers the Chef’s Table, which provides a private bird’s-eye view of the kitchen in action, while Chef Rojas and his talented team provide guests with a multi-course menu with wine or whiskey pairings based on personal taste preferences.
