Carson Kitchen is celebrated for its inventive approach to comfort cuisine while seamlessly incorporating seasonal ingredients.
As a new season has emerged, a new menu transformation follows suit. Chef and owner Cory Harwell has crafted new fresh menu offerings, currently available at the Downtown Las Vegas location.
“The winter menu at Carson Kitchen is a bold and distinctive expression of our culinary identity,” said Harwell. “Updating our menu to feature intriguing new flavors is a philosophy that feeds our culinary passion. The goal is to introduce our guests to ingredients that they would not normally go after but in a recognizable way.”
“I absolutely love the taste of duck and wanted to showcase its flavor profile in this new menu by creating a duck ga pao-styled taco. Bok Choy is one of my favorite vegetables and grilling it enhances both the flavor and texture, creating the perfect twist on a traditional salad. Our Pork Meatloaf sandwich challenges the norm, with pork taking center stage as beef is the traditional protein option. We invite our guests to join us on a culinary journey, where every bite tells a story of creativity and the joy of reinvention.”

- Butter Burger with boursin and fancy sauce ($17)
- Pork Meatloaf with molasses glaze and tobacco onion ($18)
- Pork Porterhouse with apple butter and mustard chutney ($32)
- Salmon with togarashi honey and japanese yam ($28)
- Beets & Grains with goat cheese and orange vinaigrette ($15)
- Bok Choy Wedge with miso ranch, bacon and blue cheese ($14)
- Warm Spinach Salad with maple sage vinaigrette ($14)
- Shrimp Campanelle made with hemp seed pesto and mozzarella ($18)
- Cauliflower with moroccan spice and golden raisin ($15)
- Root Veg with gochujang miso and roasted cashew ($14)

Included in the new menu are some fun and unique hand-crafted cocktails, including:
- ‘Shut Up, Cory!,’ made with vodka, spiced cranberry syrup, lime and ginger beer ($15)
- ‘Lucky #13,’ made with amaro, rum, fresh lemon, cinnamon syrup, herb bitters, red wine float ($15)
- ‘Everybody Loves Monica,’ made with gin, pernod, orange curacao, lemon, egg white, fennel bitters ($15)
- ‘Piper’s Choice,’ made with vodka, espresso liqueur, xocolatl bitters, cinnamon cream ($15)
Carson Kitchen is open for dine-in Monday through Thursday from 11:30 a.m. to 10 p.m., Friday and Saturday from 11:30 a.m. to 11 p.m., and Sunday from 11 a.m. to 10 p.m., including a featured brunch menu from 11 a.m. to 4 p.m.
