This Thanksgiving, Virgin Hotels Las Vegas, part of Curio Collection by Hilton, will celebrate with specialty dishes at a selection of the resort’s award-winning restaurant collection.

- One Steakhouse from famed restauranteurs David Morton and Michael Morton will offer specialty additions to their menu for Thanksgiving, including herb-roasted sliced turkey breast served with vegetable cornbread stuffing, blistered green beans, turkey a jus and cranberry port wine relish ($45), Yukon mashed potatoes ($16), maple-glazed yams ($16), maitake mushrooms with aged goat cheese ($16) and brussels sprouts topped with sweet soy glaze and roasted sesame ($16). One Steakhouse will open at 3:30 p.m. on Thursday, November 24.
- Coastal Italian hotspot Kassi Beach House will offer a four-course family-style pre-fixe menu for $65 per person, guests 21 and over can sip on the wine and cocktail pairings, available for an additional $36 per person. Guests will indulge in a charcuterie board with select meats and cheeses, marinated artichokes, cornichons and grilled bread for the first course. Second course will include roasted sweet potato gnocchi with parmesan foam and pomegranate molasses, braised veal with capers and lemon and braciole with tomato, garlic and parsley. For the first course, guests will enjoy zupa di pesce served with halibut, shrimp and mussels, turkey roulade stuffed with braised dark meat, mushroom stuffing, white beans and truffle butter, braised greens, corn off the cobb, Italian green beans and creamy polenta. Finally, pumpkin upside down cake with spiced whipped cream will be served for dessert. Kassi Beach House will be open from 12:00 p.m. – 9:00 p.m. on Thanksgiving, November 24.
- Virgin Hotels Las Vegas’ signature Kitchen at Commons Club will offer a traditional turkey dinner available from 11:00 a.m. – 11:00 p.m., complete with white and dark meat turkey, chorizo and pecan cornbread stuffing, mashed potatoes topped with rosemary and maple syrup gravy and cranberry compote and pumpkin pie with whipped cream for dessert ($39).
- The vibrant Casa Calavera will offer Thanksgiving fare with a Mexican twist, including roasted turkey with mancha manteles mole and roasted vegetables ($32), roasted pumpkin guacamole ($16) and pumpkin pie ($14). Casa Calavera will be open during normal hours of operation from 11:30 a.m. – 10 p.m. on Thanksgiving.
