New Restaurant, Bar with Desert Patio Serves from Scratch Seasonal New American Cuisine and Craft Cocktails
Peyote, Corner Bar Management’s eclectic new boutique restaurant and bar, is now open and accepting reservations. Located at 1028 Fremont St. inside Fergusons Downtown Motel in downtown Las Vegas’ Fremont East, Peyote serves from scratch seasonal new American cuisine and craft cocktails for brunch and dinner in a funky, laid-back setting.
Ryan Doherty, founder of Corner Bar Management, brought together a collection of local culinary, cocktail and design architects to create Peyote. They include Chef Justin Kingsley-Hall, who developed Peyote’s menu, and Kim Owens, who founded community-oriented restaurant, Main St. Provisions; Jolene Mannina, widely recognized as Las Vegas’ culinary events maven as the founder of both Secret Burger and Vegas Test Kitchen, is managing partner and oversees front of house operations; and Max Solano brings spirits expertise as beverage and cocktail program consultant.
Leading the design, Doherty took advantage of a landscape full of cacti and added a few hundred more throughout the spacious grounds. The centerpiece of the patio, which is awash in a succulent palette, is a communal firepit. A custom 3D-mapped LED bistro-light installation created by San Francisco-based artist Keegan Arthur Olton, hangs over the patio in strings of lights. The 3,400-square-foot interior blends neon, industrial elements and textures, accentuated by succulents, freshly cut flowers, and a collection of unconventional paintings that hang from the walls.
Much of Peyote’s cuisine is prepared outdoors over a live fire, including the 16 oz. Santa Maria vintage tri-tip grilled on oak, designed to feed three to six guests, which is served with grilled baby gem, corn salad, pickles, chili preserved radish, butter ball potatoes and fry bread. Other selections include American country ham on toast served with tangy pickled mustard seed, carrot aioli and wild arugula topped with red eye gravy; Carolina Gold rice risotto with grilled corn, sunflower seeds, leeks and almond milk; and a heritage pig sandwich made with grilled pork belly, grass-fed butter, radish, plum mustard, rouge creamery cheese and red pepper pickles.
Handcrafted cocktails include the Tea For Two, a refreshing shared beverage made with either certified organic vodka or small batch bourbon, OM organic lemon and ginger liqueur, fresh lemon juice, fresh white peach and cold-brewed organic earl grey tea; El Camino, made with Joven mezcal, Alpine Preserve liqueur, passion fruit puree, fresh lime-agave sour and smoked sea salt; and Hey, Smokey!, a 30-day barrel-aged cocktail made with bourbon, apple brandy, Aperol, Amaro Nonino and orange and tobacco bitters gently smoked with a proprietary wood blend.
Brunch includes grilled and chilled shellfish, served on a platter with half dozen chilled oysters on the half shell, chilled smoked mussels, grilled prawns and a half lobster tail; plant-based JUST egg quiche with red kitten spinach, caramelized leeks, lions mane mushroom and JUST eggs baked in a non-dairy pie crust; fire roasted tomato and American ham, which consists of an heirloom tomato roasted over oak, shaved American country ham, smashed then fried fingerling potatoes, red-eye gravy with two eggs; and more.
Peyote serves dinner from 6 p.m. to midnight Wednesday through Thursday, 4 p.m. to 1 a.m. Friday through Saturday and from 4 p.m. to midnight on Sunday.
